VeraCrypt is one of the most popular "on-the-fly" encryption programs, which enables you to store sensitive data on your PC in an encrypted format but to access that data normally without having to constantly think about encrypting and decrypting that data. VeraCrypt is based on the older TrueCrypt application and is free and open source.
