I have had some correspondence with Computer 360 Tech, one of many computer service organizations. Is anyone familiar with them? Are they SAFE? Any pro/con advice?

I would suggest going with a local computer company in the SLO/Five Cities area. Either a walk-in or someone who will come to your house.
